Bean & Avocado Quesadillas

  1. Spread each tortilla with cream cheese. Set 4aside. Top each of the other four tortillas with a quarter of the beans and guacamole and season with salt and pepper. Add chilli seasoning/sauce if hotter quesadillas required.
  2. Place remaining tortillas, cheese side down, over beans and avocado to make four quesadillas. Press each quesadilla down firmly.
  3. Preheat large fry pan (or sandwich press). Cook each quesadillas for approx 2 mins each side (or total if in sandwich press) until golden. Transfer to heat proof board and cut in quarters and divide among serving plates.
  4. Serve topped with capsicum and rocket.
