Bretzen

  1. Mix sugar, salt, butter, 250ml water and flaur together in a bowl and knead till smooth
  2. Cover the dough and rise in a warm place for about 1 hour
  3. Form Brezen (see picture) and rise for another 15 minutes
  4. Boil 1 litre water in a saucepan (not aluminium), add baking soda and boil for another minute
  5. Use a metal skimmer to put the brezen facing down into the hot water
  6. Leave them for about 30 seconds or wait until they come to the top.
  7. Lay Brezen on a tray with baking paper and sprinkle rock salt over them.
  8. Bake at 200°C in a preheated oven for about 12 to 15 minutes till they are brown.
  9. You should eat or freeze them the same day - if you want to freeze the Brezen just bake them till they start to become brown.
