Courgette alla Carbonara

  1. cook 200g penne pasta
  2. Fry chopped bacon in pan with olive oil
  3. Cut courgettes into four length-wise, then cut middle out of each as per diagram
  4. add bacon, a big pinch of pepper, thyme
  5. To make pasta sauce, mix all ingredients together
  6. Drain pasta, add to pan, mix, then remove from heat and let it cool slightly
  7. Stir in sauce & a couple of splashes of pasta water
  8. To serve, top with more thyme and drizzle with olive oil
