Mustard Seed Raita

  1. Peel and deseed cucumber, grate and then squeeze excess water out of cucumber. Chop mint leaves. Add both to yoghurt.
  2. Het small fry pan on medium heat. Add oil, when hot add mustard seeds, fry until they pop. Drains seeds from oil and add seeds to yoghurt mixture.

    To make a cumin raita, uses toasted cumin seeds instead of mustard seeds.
