1. Pastry: Cut butter into really small cubes then mix with flour until all the butter is mixed and it resembles fine breadcrumbs.
  2. Add small amounts of water, kneading, until it will hold together in a ball.
  3. Flatten out and into corners of dish.
  4. Cover with tin-foil and "blind bake" for 12 minutes at 200°C. Remove tinfoil and bake for further 1 min to dry out.
  5. Filling: Melt butter in saucepan and put in onion and meat. Cook until onion is clear.
  6. Add flour and cook until "frothy". Add milk slowly stirring and thickening.
  7. Remove pan from heat, and add eggs and cheese. Stir till melted and stir in herbs & pepper.
  8. Add filling to pastry and cook for 30mins.
