Berry Divine

Truly simple to make and yet oh so tasty!!
  1. Preheat oven to 220, start thawing frozen berries
  2. Cut puff pastry into quarters, prick with fork, bake until golden (~mins)
  3. whip cream, icing sugar, vanilla essence together and fold in mascarpone
  4. assemble onto plate - pastry then cream then berries then second pastry. Dust with icing sugar

    I use 1 sheet of puff pastry to make 2, then use the left over cream mix the next night
