Mediterranean Baked Fish

  1. lay fish into portions in a baking dish
  2. sprinkle with lemon zest, salt and pepper
  3. add a couple of cubes of butter per portion and then layer with slices of tomato
  4. sprinkle with dill and drizzle with white wine
  5. add a few more cubes of butter around and fan bake for 12 mins at 180
