Kumara & Blue Cheese Pasta

  1. Simmer kumara in pan of boiling water for 5-8 minutes until just tender, drain.
  2. Heat butter in large fry pan and saute onion, garlic and ginger for 4-5 minutes until soft but not coloured. Add ham and cook for a further minute.
  3. Add kumara and cream, then add in crumbled blue cheese. Simmer for 2-3 minutes until bubbling.
  4. Cook pasta according to packet directions until al dente, drain.
  5. Add the hot cooked pasta to the creamy kumara sauce and heat through, stirring to combine.
  6. Season to taste and garnish with extra ham if desired.
  7. Parma ham garnishing: Pre heat oven to 180 degrees Celcius. Lie the pieces of ham flat on a baking tray and cook for 2-3 minutes until they are crisp. Break the pieces into shards and sprinkle over the pasta before serving.
