Super Bran Breakfast Loaf

High fibre loaf that can be eaten on the go.
  1. Heat oven to 180 degrees. Place dates and water in a small saucepan and boil for about 5 mins, stirring frequently to mash up the dates. Add baking soda and mix well - it will froth up.
  2. Beat butter, with sugar and vanilla until thick, light and creamy.Then beat in egg. Mix in banana, carrot, nuts and dates.
  3. Stir flour, bran, baking powder and mixed spice together. Add to wet mixture and fold together with a large metal spoon until well combined - but do not over-mix.
  4. Spoon batter into greased loaf tin and smooth out the top a little. Bake for 45 mins or until loaf springs back when lightly touched. Leave in tin for 10 mins before turning out.
  5. Freezes well.
