Edmonds Pancakes

So yummy with a variety of toppings to choose from! Recipe says makes 8, but I can only ever get 6.
  1. Sift flour and salt into a bowl. Add egg, mixing to combine. Gradually beet in milk, mixing to a smooth batter. Chill for an hour.
  2. Stir. The batter will thicken on standing. Add a little water of necessary to bring it back to the original consistency.
  3. Heat a greased small frying pan. Pour in just enough batter to cover the base of the pan. Cook until golden on underside. Release around edges. Flip or turn and cook other side. Stack pancakes as you cook.
  4. Serving suggestions: Lemon and sugar Ice cream and fruit Berries and cream Berries, banana and yoghurt (our personal favourite is Puhoi Valley Lemon Delicious) Berries and mascapone Bacon, banana and maple syrup Cream and chocolate chips Banana and custard Crushed meringues and cream Banana and honey Rum-glazed bananas
