Slow roast fillet of beef

The protein Allyson recommends for Xmas lunch. She served it with cous cous and roast veges.
  1. Preheat the oven to 100C.
  2. Spread the fillet with a thick layer or mustard and place in a shallow roasting dish or deep-sided oven tray.
  3. Roast in the preheated oven for 2 hours. Remove and allow to rest for 10 minutes before carving. The beef can be set aside, covered, and served when ready.
