Kebabs with Couscous

  1. Combine lemon juice, crushed garlic clove, olive oil and coriander in a non metallic bowl, add chopped chicken breast and capsicum
  2. Marinade for at least 1 hour (pref. overnight)
  3. Preheat the grill and soak skewers in water for 10 minutes. thread chicken and capsicum onto the skewers.
  4. Grill kebabs for around 10-12 minutes, turning occasionally until the chicken is slightly charred, cooked through and tender.
  5. to make the yoghurt sauce, combine natural yoghurt, lemon juice and lemon rind. season with sea salt and black pepper
  6. Serve on Couscous, drizzle with the yoghurt sauce
