Blueberry & Yoghurt Muffins

  1. Preheat oven to 180 degrees celsius. Grease 12 capacity muffin tray.
  2. Combine yoghurt, milk, sugars, butter, eggs and lemon rind in bowl.
  3. Sift flour, baking soda, baking powder and salt on top. Mix gently until only just combined.
  4. Add blueberries and fold in gently.
  5. Spoon into muffin cups. Bake for 20-25 minutes.
  6. For that special touch: cut tops off muffins and spread lemon honey on base along with a dollop of yoghurt. Place lid back on and lightly sieve icing sugar on top.

    Fresh blueberries are supposed to be used. I used frozen ones, will let you know how it goes.
