Eggplant Gratin

  1. Pre-heat oven to 200 degrees celsius, and turn on grill if using separate grilling device. Grate cheeses.
  2. Slice eggplant into 5mm slices, spray with oil and grill or bake till cooked and tender. (I grill in George Foreman grill for approx 5-8 mins).
  3. Spread a little olive oil in bottom of gratin dish. Add layer of eggplant slices, pasta sauce (just cover eggplant) and some of the grated mozzarella (approx 1/4).
  4. Continue layering until all ingredients used, ending with a layer of sauce. Sprinkle parmesan cheese over the top. Bake in oven 30 minutes or until bubbling.
