Slow Roasted Tomatoes

"I particularly liked being able to pull out the cherry ones for fettucine (cooked pasta mixed with toms + chicken and or bacon + a bit of cream - heaven)." Silk
  1. Cut toms in half, place cut side up in roasting dish. Sprinkle with a bit of salt and pepper if desired, drizzle with a little oil and a little balsamic, add some whole garlic cloves if desired.
  2. Roast on low (like, 150 deg C or even cooler if you like) for a good couple of hours.
  3. While hot bottle into sterilised jars, 'juice' and all, then top with hot oil to within a cm of the top, and seal.
