Pasta with Olives, Tomatoes, Garlic & Rosemary

  1. De-seed and roughly chop tomatoes, squash and de-stone olives, finely chop garlic, roughly chop cos lettuce, and finely chop chili.
  2. Pasta Sauce: \r\nAdd a couple of good lugs of olive oil to large frying pan.
  3. Fry garlic & chili for 30 seconds, add tomatoes & olives, cook 4 - 6 minutes.
  4. Combining sauce & pasta: \r\nAdd cooked pasta to frying pan, add chopped cos lettuce, stir through and serve with salt & pepper to taste.
  5. Serving Suggestions: \r\nGreen salad & bread or\r\nCrumbed chicken & garlic bread
