Baked Fish with warm Nicoise dressing

  1. Cook potatoes in a large saucepan of boiling water until tender approx 10 minutes, adding the beans for the last 1-2 minutes of cooking time. Drain vegetable and halve potatoes.
  2. Cook fish.
  3. Dressing: PLace a small fry pan over medium-low heat. Add balsamic vinegar, olive oil olives, capers and chilli to pan with 1 tablespoon of water. Heat for 1 minutes or until dressing is warmed through. Stir through parsley.
  4. Drizzle warm Nicoise dressing over fish and serve with potatoes and beans.
