Roasted Rhubarb Salad

  1. toss rhubarb in sugar and leave for 10 mins, stiring a couple of times
  2. spread out on tinfoil and bake at 230C for 5 mins
  3. combine balsamic vinegar, olive oil, shallot, salt and black pepper. Mix through mixed baby greens
  4. Top with feta, walnuts, saltanas and rhubarb mix
