Indian Burgers

  1. peal & chop kumara into large chunks - boil until tender
  2. Peel and chop onion. cook onion, garlic, & ginger in a dash of oil until tender not brown
  3. stir in curry paste and cook for 1-2 more mins
  4. mash kumara and beans together
  5. add onion mixture and season with salt and pepper
  6. stir in fresh chopped coriander
  7. wet hands and shape mixture into 8-10 patties, frying gently for 2-3 minutes each side.
  8. Serve burgers with yoghurt and cucumber raita, salad, naan bread, and mango chutney.
